All About Violets // harvesting, infusing & pressing to dry

At Okanagan Lavender & Herb Farm, we grow, harvest, dry, distill and infuse over 20 aromatic plants to make the ingredients for our small batch botanical products: https://www.okanaganlavender.com/

Our Workshop Wednesday series highlights our favourite herbs from the garden and how they can be used to create lovely products with simple ingredients you probably already have on hand at home!

This video is all about taking advantage of the short, springtime violet season and we show you how to harvest the fragrant blooms, infuse them in coconut oil or berry sugar, and press them for art cards or pastry decorations.

More ideas for how to use violets can be found on our blog here: https://www.okanaganlavender.com/blog/2019/04/simple-springtime-violets/

Don't have violets at home but still want to try the sugar? You can find it in our online store here: https://shop.okanaganlavender.com/collections/culinary/products/floral-sugar-violet

For those of you who are interested in exploring the culinary side of edible flowers, Jekka McVicor's website is an excellent resource: https://www.jekkas.com/

You can press your own flowers easily with a folded piece of paper and a heavy book, or you can use (or make) a flower press:
