🛒 Ingredients:
– 4 medium potatoes
– 2 tbsp olive oil
– Salt & pepper (to taste)
– 100g cheddar cheese (grated)
– 200ml fresh cream
– 2 tbsp butter
– 3–4 slices of bacon (fried and chopped)
– 2 stalks green onions (chopped)
– Fresh herbs (optional, for garnish)
Cooking Steps:
Step 1 – Prep the Potatoes:
– Wash and poke holes in potatoes.
– Rub with olive oil, salt, and pepper.
– Bake at 200°C (392°F) for 60 mins until crispy outside and soft inside.
Step 2 – Make the Filling:
– Fry chopped bacon until crispy.
– Melt butter with fresh cream in a saucepan (do not boil).
– Cut baked potatoes in half, scoop out flesh and mash.
– Mix mashed potato with bacon, cheese, green onion, and cream-butter mix.
Step 3 – Stuff & Bake Again:
– Refill potato skins with the cheesy mixture.
– Sprinkle more cheese on top.
– Bake for 15–20 mins until golden and bubbly.
Step 4 – Serve:
– Garnish with green onions and herbs.
– Best enjoyed hot with a fresh side salad or on its own!
