Ingredients
100 g firm tofu, cut into slabs
1 vegan, gluten-free burger bun
Spicy jalapeño sauce
1 slice vegan cheese
Lettuce leaves
2 tomato slices
A couple of onion rings
Sriracha mayo
Spray of olive oil
Tandoori Marinade Ingredients
½ cup coconut yogurt
2 tbsp tandoori masala
1 tsp cumin powder
½ tbsp red chili powder
½ tsp paneer tikka masala (or any masala you have, like chaat, chana, or pav bhaji masala)
1 tbsp minced garlic
1 tsp salt
1 tbsp oil (I used avocado oil)
Method

In a bowl, mix the coconut yogurt, tandoori masala, cumin powder, red chili powder, paneer tikka masala, minced garlic, salt, and oil.

Add the tofu slabs to the marinade, ensuring they're coated evenly.

Let it sit for at least 15 minutes to absorb the flavors.

Spray a frying pan with olive oil and heat over medium-high heat.

Add the marinated tofu slabs to the pan.

Cook until golden brown on both sides, about 3-4 minutes per side.

While the tofu is cooking, spray both sides of your gluten-free burger bun with olive oil.

Place the buns in the same pan next to the tofu to toast until golden and crispy.

On the bottom half of the toasted bun, layer lettuce, a slice of vegan cheese, the spicy tandoori tofu, tomato slices, onion rings, and a drizzle of sriracha mayo.

Top with the other half of the bun.
