Persian Baghali Polo with Fresh Dill & Veal Tongue
Ingredients
For the Veal Tongue
• 1 whole veal tongue
• 2 onions, quartered🧅
• 2 large carrots🥕
• 1 sweet pepper 🫑
• 4 garlic cloves🧄
• 3–4 slices fresh ginger🫚
• 2 bay leaves
• 1 small cinnamon stick
• 1 tsp whole black peppercorns
• Turmeric, salt, and black pepper
• Butter or oil
• Brewed saffron
For the Baghali Polo
• 4 cups Persian rice
• 2 cups fresh fava beans, peeled
• 2–3 cups fresh dill, finely chopped
• Salt
• Oil or butter
• Brewed saffron
Instructions
Step 1 – Cook the Veal Tongue
1. Wash and clean the veal tongue thoroughly.
2. Place it in a large pot and add:
• onions
• carrots
• garlic
• sweet pepper
• fresh ginger
• bay leaves
• cinnamon stick
• black peppercorns
• turmeric
3. Add enough water to fully cover the tongue.
4. Simmer over low heat for 3–4 hours until very tender
(or 75 minutes in a pressure cooker).
5. While still hot, remove the thick outer skin from the tongue.
6. Slice the tongue into pieces.
7. In a pan, melt a little butter with saffron and lightly sauté the sliced tongue with a bit of salt and pepper.
Step 2 – Prepare the Baghali Polo
1. Soak the rice in salted water beforehand.
2. Bring a large pot of water to a boil.
3. Add the rice and cook until partially tender.
4. Add the fresh fava beans and chopped fresh dill directly into the boiling rice water.
5. After 1–2 minutes, drain everything together.
6. Add your preferred tahdig to the bottom of the pot.
7. Layer the rice into the pot and drizzle with butter, oil, and saffron.
8. Steam on medium heat for 5 minutes, then reduce to low heat and cook for 40–45 minutes until fluffy and aromatic.
To Serve
Plate the saffron rice and arrange the sliced veal tongue on top or alongside the rice. Garnish with extra saffron rice and fresh dill if desired.
