Ulta Vada Pav/ Vada Pav inside-out - Iftar Snacks
Vada Pav is a popular street food of Mumbai. It originated in the streets of Mumbai and is quite cheap, and affordable to every common man. Even though it is considered as street food, it is sold in upscale restaurants all over.
This snack is also referred to as Indian Burger or aka Bombay Burger because it hails from Maharashtra. This version which I am showing today is vada pav inside out. Here is pav is fill with the stuffing and then the whole thing is dipped in besan batter and deep-fried. Hence the name. I do make this version when I get hold of cute buns.
List of ingredients
For outer covering/besan batter:
3 tbsp rice flour
1 1/2 cup of besan/chickpeas flour
Salt as per taste
3/4 tsp Asafetodia/hing
For the stuffing/aloo bhaji:
5 boiled potatoes
Small bunch of coriander leaves
1 1/2 inch piece of ginger
6 garlic pods
6 green chillies
1 tsp mustard seeds
3/4 tsp cumin seeds
Salt as per taste
Oil as required
3/4 tsp asafoetida/hing
Juice of half lemon
1/2 tsp turmeric powder
Buns as required
Oil for frying
For Red chutney:
4-5 pods Garlic
Salt as per taste
Chilly powder
Crumbs left out after frying the vadas
