Grilled Skirt Burger
Everyone loves a good cheese burger, but add a huge crispy cheese skirt to it and you have created one awesome burger!
***What You need***
-80/20 Ground Chuck/Beef
-Plenty of your favorite shredded cheese (we used Colby Jack)
-Multiple 8-9" disposable pie pans
-All the fixings....
This is a basic burger recipe but we took it the extra mile with a huge cheese skirt. Most of the time a skirt burger is cooked on a flat top or a griddle. This allows all of the extra cheese to run off and crisp up on the surface of the flat top. Well, since I do not have a flat top or griddle, I improvised. In this recipe you will see how to get the same great crispy cheese using a standard grill that we all have.
First off, we need to get the burgers formed and seasoned. We used the standard 80/20 ground chuck. Each burger weighed in at about 1/2 pound.
We seasoned with a simple salt, pepper, and garlic blend from https://townsendspice.com/ and of course our own "Mississippi Grind". Anytime you add a little bit of a BBQ rub to beef it always helps with the crust and adds a little flavor.
This entire recipe was cooked on the Weber 26" Kettle. I set the kettle up for 2-zone cooking using the slow and sear accessory. Once the coals were good and hot I placed a Grill Grate over the fire with the smooth side up. I wanted to make sure the burgers had a perfectly seared crust to go along with the cheese skirt.
For the cheese skirt I cheated by using a 8-9" disposable pie pan. I simply sprayed the pan with a non-stick cooking spray and sprinkled my favorite shredded cheese in the bottom. I would say it was about 1/4" thick. This allows the cheese to melt and form a great crust.
Now that everything is prepared we can get to cooking. I placed the burgers on the Grill Grates and the cheese on the cool side of the kettle. This will let the cheese pick up some of the grill flavor while the burgers are cooking. The Grill Grates were screaming hot and it only took about 3 minutes a side to get the crust we wanted. Once the burgers were close to being done I moved them to the cool side and got the Grill Grate out of the way. This allowed me to basically fry the cheese and get the crispy crust I was looking for. It only took about a minute on the coal side to get the cheese done. Of course cook the burgers to your liking and temperature.
Now its time to build these burgers. You can dress the burgers up however you like. I chose the basic burger toppings because the Cheese Skirt is the star of the show. The cheese should come right out of the pan with a little help from a butter knife or spoon.
This Burger has become one of our household favorites and for good reason. This is a great recipe and is simple and quick. It would be easy to do this for a larger crowd and adds a little excitement to your standard burger.
