HEALTHY MEDITERRANEAN DIET BREAKFAST IDEAS/ Cheesecake Chia Pudding, Baked Oats + Almond Citrus Cake
Ciao, today I am sharing 3 different Mediterranean diet inspired quick, easy and healthy breakfast recipes! In my opinion, a true Mediterranean diet breakfast includes healthy fats, wholesome carbs, and quality protein not to mention fiber, nutrients and so much more! RECIPES
Blueberry Lavender Cheesecake Chia Pudding
Chia pudding
* 1/2 cup chia seeds
* 1 1/4 cups non-dairy milk of choice
* 1/2 cup coconut yogurt (I used culinary blueberry lavender)
* 1/4 cup wild blueberries
* 1/2 tsp dried lavender or 1-2 drops lavender essential oil
* 1 tsp vanilla extract
* 3 tsp honey
Center
* 1 cup crushed graham crackers
Cheesecake Cream
* 1 1/2 cups raw cashews (soaked overnight)
* 1 tsp vanilla extract
* 1 Tbsp lemon zest
* 1/4 cup lemon juice
* 1 Tbsp melted coconut oil
* 1/2 cup honey
* 3/4 cup coconut yogurt (I used culinary blueberry lavender)
* 1/4 tsp sea salt
* 2-3 drops high-grade lavender essential oil
* 1/4 cup wild blueberries

Baked Raspberry Chocolate Oats (for a more fluffy cake-like texture as opposed to gooey I recommend using an egg in place of the flax meal and either whey protein or no protein powder!)
* 1 cup rolled oats
* 1 tbsp ground flaxseed
* 1 mashed banana
* 1 tbl honey
* 1 tsp baking powder
* 1 scoop protein powder)
* Pinch sea salt
* 1 tsp vanilla extract
* 1 cup dairy-free milk
* 2 tbl raspberry chia jam
* chocolate (i used ruby chocolate)
Almond Citrus Yogurt Cake
* 1/2 cup yogurt (or ricotta)
* 1/4 cup honey
* 1/2 cup coconut sugar
* 3 eggs - at room temperature
* 1/2 cup olive oil
* 2 tablespoons lemon or orange juice
* zest of 1 large lemon + orange
* 2 cups almond flour
* 1/2 cup semolina
* 1 teaspoons baking powder
* 1/2 tsp baking soda
* 1/4 teaspoon salt
* blood orange
* 2-3 tbl powdered sugar
