INGREDIENTS FOR MASA
4 cups (1 lb or 454 g) Instant Corn Masa Flour
1 Tbsp (13 g) salt
1 Tbsp (15 mL) oil
4 1/2 cups (1 L) hot water
*extra hot water may be needed to keep masa from drying out

CHICHARRON FILLING
4 oz (113 g) chicharron or crispy pork chopped
2 cloves (10 g) garlic
1/4 of a small onion (30 g) diced
1 small Roma tomato (60 g)
1/4 of a small bell pepper (40 g) diced
4 oz (113 g) mozzarella cheese shredded

BEAN FILLING
15 oz can small red beans drained
1 cloves (5 g) garlic
1/4 of a small onion (30 g) diced
1 small Roma tomato (60 g)
1/4 of a small bell pepper (40 g) diced
4 oz (113 g) mozzarella cheese shredded

WATER OIL MIXTURE
1/1/2 cups water
2 to 3 Tbsp oil

INSTRUCTIONS
- For the pork filling, in a food processor add chopped chicharron,
onion, garlic, bell pepper, tomato and puree until paste like
consistency.
- Place pureed pork mixture in a bowl, add cheese and combine well.
Set aside until needed.
- For the bean filling, in a food processor add drained cooked beans, onion, garlic, tomato, bell pepper and puree well.
- In a preheated pan add 1/2 a Tbsp of oil, pureed beans, a pinch of salt and pepper to taste and cook until beans are thick and paste like.
- Set beans aside to cool completely.
- Once bean mixture has cooled and cheese and combine well.
- For the masa dough add instant corn flour, salt, hot water, oil and mix well
NOTE: More hot water may be needed if you are not weighing ingredients or masa is too dry. The masa should be soft and the texture of Playdough. Be sure to keep masa dough covered to prevent it from drying out. You can add more hot water and mix to keep the masa workable through out the process.

- To form the pupusas, dip your hands in the water oil mixture, take a golf ball sized amount of masa, press and flatten, add a meatball sized amount of filling to the center and carefully enclose the masa around it.
- Then carefully flatten in to a disc. If filling is exposed, just take a little extra masa and cover the exposed area.
- Once your first pupusa is made, place it on a preheated, lightly oiled griddle and cook on a medium low heat until the pupusa is steaming and bubbling on the inside and the outside is crisp and golden brown.

NOTE: Cook time will vary, but cooking on a medium to medium low heat will give the inside a chance to cook through before the outside burns. Be sure to adjust your heat accordingly through out the cooking process.

This recipe makes 15 to 18 small to medium sized pupusas and pairs well with Salvadoran style pickled cabbage.
