Recipe:
Ingredients:
* 1 cup quinoa
* 1 1/2 cups water
* Salt to taste
* 1 tsp Olive oil
* Broccoli florets
* Sliced mushrooms
* Red chili flakes
* Yellow, red, and orange capsicum (bell peppers), chopped
* Sweet corn kernels
* Black olives
* Black pepper powder
Instructions:
1. Rinse quinoa thoroughly.
2. Soak quinoa for 30 minutes.
3. Boil water with salt. Add quinoa and cook for 10-15 minutes.
4. Sauté broccoli and mushrooms in oil for 5 minutes. Season with red chili flakes, salt, and black pepper.
5. Combine cooked quinoa, sautéed vegetables, capsicum, corn, and olives in a bowl.
6. Season with salt, pepper, and red chili flakes to taste.
