Making Strawberry Ice Cream Bar Cookies from Crumbl Cookies! 🍓🍪

Crumbl Cookie's Strawberry Ice Cream Bar Cookie instantly reminded me of the Strawberry Shortcake bars I used to enjoy as a kid. When I heard these sweet treats could take on a cookie form, I knew I had to whip up a batch of these cookies. Since there was no direct recipe online, I got creative and came up with my own. It's as sweet and tasty as it looks :)

Cookie Ingredients
1/2 cup butter
1/2 cup sugar
1 egg
1/2 tsp vanilla extract
1/4 tsp almond extract
1.5 cups flour
1 tsp baking powder

Frosting Ingredients
1/4 cup butter softened
1.5 cups powdered sugar
1/2 tsp vanilla extract
1 tbsp milk
