Making My Mom's Famous Dumplings... With My Mom

Ingredients:
- 1lbs Napa cabbage
- 1.5 lbs chives
- .5 lbs mushrooms
- 1 lbs chicken
- 1 lbs shrimp
- 3 dumpling wrapper packets(around 150 wrappers)
- 5 teaspoons salt (for cabbage)
- 5 teaspoons salt (for filling)
- 1-2 cups olive oil
- 3 eggs
- 1/4 cup sesame oil
- 5 teaspoons chicken bouillon seasoning
- 1-2 teaspoons five spice powder
1) chop chives and mushrooms into a fine dice. Set aside in mixing bowl.
2) dice cabbage and add to separate bowl, add 5 teaspoons salt.
3) squeeze cabbage until water begins to pool. Continue for 5 min.
4) get another bowl and cover with cheesecloth/tablecloth. Add cabbage to bowl.
5) wrap cabbage inside the cloth and squeeze excess water until almost dry (around 5 min) add to mixing bowl after.
6) chop chicken and shrimp into a fine dice/paste. Add to mixing bowl.
7) mix until partially combined, then add eggs, olive oil, sesame oil, the rest of the salt, chicken seasoning, and five spice powder to mixture. Mix until well combined. Add more oil if needed.
8) if needed, cover dumpling wrappers with a hot towel and dab the sides with it to soften the wrapper.
9) add a spoonful of filling to each wrapper and form dumplings (visuals in video)
10) freeze up to one month if storing. Otherwise, boil water(enough to allow dumpling to fully submerge) in a large pot. Add dumplings when boiling. Stir to prevent them from sticking.
11) once it boils again, add 3/4 cup cold water two times, only when water boils again.
12) remove dumplings when they float.
