MISO EGGPLANT (DF, VG) 🇯🇵✨

Welcome to JAPAN in Episode 9 of my series ‘Around The Eco World 🌏’ where I show you plant-based versions of popular dishes from around the world that I’ve experienced first hand!

MISO EGGPLANT (vegan):
- 2 Japanese or small Italian eggplants
- neutral oil

Slice in half and score the flesh. Coat with oil and broil for 5-8 minutes flesh side down until about fork tender.

- 1 tbsp white miso
- 1 tbsp soy sauce
- 1/2 tbsp mirin
- 1 tsp white cane sugar
- 1 tbsp dry sake
-1/4 tsp red chili flakes

Brush miso sauce onto the broiled flesh until throughly coated. Broil flesh side up for another 5 minutes.

Garnish with sliced scallions & toasted white sesame seeds.
