Tapping Sugar Maples with Tim: Making Tree Gold

Sugar maple, scientifically called Acer saccharum of the Sapindaceae family, gives us sap, which we can drink right away, or concentrate into syrup or further concentrate into sugar.

Today, you’ll meet Tim, our sugar maple tapping guide, showing us, step by step, how to harvest sap from the magnificent maple.

We are tapping 35 maple trees (really Tim is) and we'll see how much sap that yields and then how much syrup. Note that 40 (or more) gallons of sap makes 1 gallon of syrup.

I also enjoy fermenting the fresh sap into kefir soda = pretty cool and hip. These details are fleshed out in our delicious Foraging & Feasting book on page 97. Check the book out of your local library, or order your own copy, just in time for spring foraging.
