HowTo: Persian Herbs and Noodle Soup "Ash Reshteh آش رشته" Under the snow
This week on Tahdigers, we have created “Persian Herbs and Noodle Soup” known as “Ash-E-Reshteh”.
Famous for being served during the winter when its cold outside and cold inside (because the heater is broken), but as soon as you take nice and big spoon out of that bowl, every organ begins to get warm and cozy.
A spoonful of “Persian Herbs and Noodle Soup” consists of throughly cooked and flavored beans and herbs, with a little softness from the thick noodles, some sourness from the curd, some freshness from the dried mint, and at last, the perfectly sautéed onions and garlic cubes that get in between all these flavors to fully complete this dish.
I don’t know about you but every year I have a hard time getting through winter , mentally and physically, but let me tell you, when you choose to surround yourself with love, family, friends, and good food, it all gets a bit easier and before we know it, spring is here.
So take advantage of these cold days and make some “Ash-E-Reshteh” to get cozy.
Rumor has it, on nights when “Ash-E-Reshteh” is served, family members are advised to sleep 6-foot away from each other due to the immense amount of Gas that is created in your belly by the beans. (Unless you let the beans get soaked for a few hours, then you’re good. So take that step seriously.)
