Thankfully, Audrey Saunders of the late, great Pegu Club invented the Intro To Aperol, a perfect summer drink that showcases the core flavors of this wonderful Italian aperitivo, balancing out its trademark sweetness with gin, lemon, bitters and an all-important orange twist.
