Simple Korean Boiled Pork Belly (Suyuk)

In this video we’d like to share how to cook boiled pork belly (known as “Suyuk” in Korean (“boiled meat” in English)). Boiling meat is a healthy cooking technique in Korea in order to eliminate the fat out of the meat. Our recipe is simple to cook for less than an hour, so please follow the steps in the video.

*Ingredients*
- Boneless pork belly (1.6kg/3.5lbs)
- Apple (1ea), onion (1ea), green onion (1 bundle), garlic (1 bulb)
- Peppercorn (1tbsp), soybean paste (2tbsp), ground/instant coffee (2tsp),
Ginger (20g/70oz), cooking wine (2tbsp), bay leaves (7ea)

*Directions*
1) Cut pork belly in each loaf around 453g/1lb.
2) Slice apple, onion, and green onion in 1/4. (Peel garlic.)
3) In a pot pour water until the pork belly can be submerged.
4) Put apple, onion, garlic, peppercorn, soybean paste, green onion and coffee.
5) Once the water boils, put ginger, cooking wine, bay leaves and pork belly.
6) Over high heat boil for 10 min. without a pot-lid.
7) Lower the heat to medium, and with the lid on boil for 40 min.
8) Remove meat from the pot and cut it into bite-sized pieces.

**Before boiling the meat, it is ok to put all the ingredients at once in the pot.
