How to Make Beef Birria in Crockpot with Consome- Quesatacos- Easy and Delicious

In this video I made some delicious beef birria in a crockpot and also made some quesatacos for my family to enjoy! Thanks for watching.

Ingredients
Meat prepearation:
5 lbs. chuck roast, beef shank, or other beef roast (beef bones but you could also use a cut of meat with bones
1-2 32oz. beef stock
1 28oz. can crushed tomatoes
1 small can chipotle in adobo sauce
1 large onion diced
Spices:
1 head garlic diced
1 Tbsp. salt
1 Tbsp. pepper
1 Tbsp. garlic powder
1 tsp. hot paprika
1 Tbsp. oregano
1/4 tsp cloves
1/4 tsp. cinnamon
1 tsp. cumin
2-3 bay leaves
Chili Paste:
1 2 oz. pkg. guajillo chili pods
1 2 oz. pkg. ancho chili pods
1 2oz. pkg. New Mexico pods

Instructions
Chili Paste:
1. Remove stems and shake out as many seeds as possible. Place all chili in a pot and cover with water. Boil 15-20 minutes until softened. Place chili in batches in blender then use 1 cup at a time to puree until smooth. Transfer to another bowl and continue until all chili is pureed.
Meat:
1. Season meat with salt and pepper
2. Massage chili paste onto meat and transfer into crockpot,
3. Sprinkle remaining spices and add diced garlic and onion to crockpot and mix in.
4. Pour remaining chili paste over meat and add can of crushed tomatoes and beef broth to crock pot then add 1 chipotle.
5. Set crockpot on low for 7 hours once done taste broth to see if you need to add more garlic salt.
6. Remove all large cuts of meat to a tray, once it's cool enough to handle begin to shred.
7. Collect some oil from top of broth to use for tortillas if making quesatacos.
8. Pour broth into large pot or dutch oven and then put shredded meat back into crockpot. Set crockpot on low for 1 hour or so and add a little broth as needed. Meat is now ready!
Consome:
1. Broth set aside in large pot can be used to dip quesatacos in to for extra flavor or poured over meat in crockpot.
Quesatacos:
1. On a skillet spray some non-stick spray and heat to medium high.
2. Take 2 tortillas and dip in oil set aside from broth earlier and set on skillet.
3. Once it start to sizzle add meat and cheese of your choice(preferably Oaxaca, mozzarella, Monterey jack or any other melting cheese of your choice)
4. Fry on both sides until desired crispness and then add condiments of your choice.
