2026 is the year I eat a lot more edamame. It’s a rich source of protein, fibre and iron - and it’s really simple to cook with.

Most edamame comes par-cooked and frozen so all it takes is a few minutes in boiling water. Then it can be added to salads, noodles - or blended with fresh herbs and plant-based yoghurt to spread all over toast.
