Chicken Pelau

Boneless Chicken Thighs
1 Cup Chopped Bell Pepper
1/4 Cup Scallions
1/4 Cup Chopped Celery
1/2 Onion
2 TBSP Minced Garlic
2 TBSP Green Seasoning
1/2 TBSP Anatto Powder
1/2 TBSP All Seasoning
1/2 TBSP Salt
1 Can of Red Kidney Beans
2 Cups Carrot
2 Cups Brown Rice
2 Cups Coconut Milk
1 TBSP Butter

Hey guys! We'd like to formally welcome you to the first episode of Cooking Around the Planet! The weekly show where we randomly pick a country out of a hat, learn about the place and culture, find an authentic meal from that country and then give it our best shot at cooking that meal for dinner. All the while, sharing everything we learn with you! This idea came to us two years ago while we were having breakfast at our favorite place, an Argentinian spot called Wake Up Cafe. We are so excited to finally be making it happen! There's nothing we love more than experiencing new cultures, food and travel. As we share these meals we hope to inspire people to learn about cultures they may have never thought twice about, to think outside the box when it comes to dinner time and to be humbled by just how fascinating and complex life is on this beautiful planet!
