Slow-cooker Vegan Sweet Potato Chili (Low salt!)

Today, we show you how to make a sweet potato themed slow-cooker chili. Great in flavor and low in salt!

Our special low sodium products we used are:
-Eden Organic Black Beans "No Salt Added" (15mg per ½ cup)
-Eden Organic Kidney Beans "No Salt Added" (15mg per ½ cup)
-Del Monte Diced Tomatoes "No Salt Added" (50mg per ½ cup)

*The rest of the ingredients we used are little to no sodium

Recipe

Serves: 8-10

Ingredients:

2 medium red onion, chopped
2 green bell pepper, chopped
8 garlic cloves, minced
2 tablespoon chili powder
2 tablespoon ground cumin
4 teaspoons unsweetened cocoa powder
1/2 teaspoon ground cinnamon
2 (28-ounce) low salt can fire-roasted diced tomatoes
2 cups water
2 (15.5-ounce) can black beans, rinsed
2 (15.5-ounce) can kidney beans, rinsed
2 medium sweet potato (about 8 ounces), peeled and cut into 1⁄2-inch pieces
Vegan sour cream for garnish and low salt seasonings to taste

Directions:

1. In a 10 to 12 quart slow cooker, combine the onions, bell peppers, garlic, chili powder, cumin, cocoa powder, cinnamon, and low salt seasonings to taste. Add the tomatoes (and their liquid), beans, sweet potatoes, and 2 cup water.

2. Cover and cook until the sweet potatoes are tender and the chili has thickened, on low for 7 to 8 hours or on high for 4 to 5 hours.

3. Serve the chili with vegan sour cream if so desired.
