Gut-Friendly Summer Soup Recipe:
Ingredients:
Baby cucumbers (3 medium or 12 mini)
1 cup fresh mint or basil leaves
5 cloves garlic
6 oz plant-based yogurt (***plain; not vanilla)
1 - 3 tbsp olive oil
1 - 2 tbsp ACV
1 tsp salt
12 drops hot sauce (any kind)
½ cup water
Directions:
1. Add all ingredients to a blender or food processor and blend until smooth
2. Serve with plantains, cassava flatbread, flax seed crackers, or over fresh, light greens for a soupy-salad.
