How To Make Fall Leaf Cut Out Cookies

These adorable cookies are the perfect way to celebrate fall and satiate your sweet tooth. Learn how to make them with our pastry chef in this tutorial video.

SHORT DOUGH
8 oz cake flour
9 oz bread flour
¼ tsp salt
11 oz butter
12 oz sugar
2 oz egg yolks
½ tsp vanilla extract
1. Mix the dry ingredients with the paddle attachment. Add the butter and mix until the mixture resembles coarse corn meal. Add the egg yolks and vanilla and mix until all of the ingredients are incorporated. Chill the dough.
2. Roll and cut into desired shapes and bake until golden brown around the edges at 350 degrees-about 20 minutes-depending on the size of the cookie.
3. Allow the cookies to cool and decorate with royal icing
ROYAL ICING FOR COOKIES
1 lb powdered sugar
3 oz egg whites
¼ tsp clear vanilla
1. Sift the powdered sugar into a mixing bowl and gradually add the egg whites using the paddle attachment until the mixture is light and a toothpaste like consistency. Cover with a damp cloth and plastic wrap while using because the icing will dry.
2. Outline the cookies with the royal icing using a small round pastry tube. Thin down the royal icing with water until it is a thick syrup-like consistency and use this icing to flood the inside of the cookie. Let dry and decorate with desired colors of royal icing.
