PEANUT BUTTER BROWNIE CHEESECAKE recipe by SAIMA KHAN
Ingredients:
For 8 servings
36 oz brownie mix(510 g),
2 boxes, batter prepared according to package instructions
24 oz cream cheese(680 g), softened
½ cup sugar(100 g)
1 cup peanut butter(240 g)
1 teaspoon vanilla extract
2 large egg
½ cup semi-sweet chocolate chips
½ cup dark chocolate chips
For the topping: 1½ cup of semi sweet chocolate
1 cup cold whipping cream
2 tbsp peanut butter
2 tbsp whipping crea
Preparation:
Preheat the oven to 350°F (180°C).Line a 10-inch (25-cm) springform pan with parchment paper to avoid sticking.
Prepare the brownie batter according to package instructions. Bake it according to the instructions.
Pour in the brownie batter.Bake for 45 minutes at 300°F (150°C). Let it rest until the cheese cream filling is ready.
Reduce the oven temperature to 300°F (150°C) after the brownie is out of the oven.
In a large bowl, mix together the cream cheese, sugar, vanilla, egg and peanut butter until there are no lumps and the batter is smooth.
Fold in the chocolate into the batter.
While the brownie is still warm, carefully rotate and press down on the inner cake pan using a smaller pan.
Pour the cheesecake batter on top of the brownie and spread evenly across the top.
Bake for about 50 minutes at 300°F (150°C). until the cheesecake slightly jiggles in the center. Freeze until the top of the cheesecake is slightly firm, about 30 minutes.
For the ganache, heat the whipping cream and Pour over chocolate, then let it sit for 2-3 minutes to gently soften the chocolate. Stir until combined.
Do the same thing to the peanut butter.
Pour it onto of the cheese cake evenly and make a design as preferred.
Chill completely, then release the pan.
To create whipped cream. Combine, 1 cup heavy cream, 1/2 tsp vanilla essence and 1 tbsp sugar. Whisk until it reaches stiff peaks. Pipe it on top
Slice, and serve.
