Sweet corn pulao is a light, colorful, and mildly sweet rice dish made with juicy corn kernels, fragrant basmati rice, and gentle spices. It’s a quick and comforting meal, perfect for lunchboxes or a simple family dinner. The sweetness of corn blends beautifully with the aromatic spices.
Ingredients:
1 cup basmati rice (soaked for 20 minutes)
1 cup sweet corn kernels (fresh or frozen)
2 tsp oil and 2tsp butter
1/2 tsp oregano
1/2 tsp chilli flakes
1/2 tsp paprika
1/4 tsp turmeric powder
4 cloves minced garlic
lime juice
Salt to taste
black salt
Fresh coriander leaves (for garnish)
Method:
Prep rice:
Wash and soak the basmati rice for 20 minutes. cook, drain and keep aside.
Tempering:
Heat oil and butter in a pan. Add minced garlic. Let it release their aroma.
Sauté:
Add oregano, chilli flakes, turmeric and paprika.
Add corn:
Add parboiled sweet corn and cook for 2–3 minutes. Add salt, lime juice and coriander leaves.
Add rice:
Add drained cooked rice and gently mix.
Finish:
Fluff the rice and garnish with fresh coriander leaves.
Serving Suggestion:
Serve hot with raita, pickle, or a fresh salad for a complete and satisfying meal.
