Kadakani, also known as Sweet Puri or Kadak Puri, is a crispy, deep-fried Indian flatbread traditionally made in Maharashtrian and Gujarati cuisine, often as a prasad (offering) during festivals like Navratri.

Ingredients
1 cup Maida
1/2 cup Rava
2 tsp powdered sugar
1 tsp salt
2 tsp hot oil
Oil for frying

Instructions
1. Prepare the Dough
Combine Dry Ingredients: In a large bowl, mix the Maida , rava , rock salt, sugar, .
Add hot oil (2 tsp ) into the mix. Rub the mixture with your fingertips until it resembles coarse crumbs. This step is crucial for the kadak (crisp) texture.
Knead: Gradually add water, little by little, and knead everything into a stiff and firm dough. The dough should be slightly harder than your regular puri dough.
Rest: Cover the dough with a damp cloth and let it rest for atleast 1 hour
2. Shape the Kadakani
Divide: Knead the dough one last time and divide it into small, equal-sized balls (about the size of a lemon).
Roll: Lightly grease your rolling surface. Roll each ball into a thin circle (puri). The thinner the puri, the crispier the kadakani will be.
Prick: To ensure the puris remain flat and crispy instead of puffing up like regular puris, .
3. Fry the Kadakani
Heat Oil: Heat the oil or ghee in a deep kadai or pan over medium-low heat. The oil should be moderately hot.
Fry: Gently slide 2-3 prepared kadakanis into the hot oil.
Drain: Flip the kadakanis frequently and fry until they turn a light golden-brown color and are fully crisp.
Cool: Remove them and drain the excess oil on absorbent paper.
Store: Allow them to cool completely before storing them in an airtight container. They should remain crispy for several days.
Serve the Upvas Kadakani as a snack or prasad during your fast. They can be enjoyed plain, or alongside a simple Vrat potato curry.
