Pumpkin Cheesecake Cookies

Grab your sheet pans because today I’m showing you how to make pumpkin cheesecake cookies.

These cookies use pumpkin puree to give them their signature flavor, and have a cream cheese filling inside.

Preheat your oven to 350 degrees and turn your attention to the dough.

You will need
⁃ 3 1/4 cup of all purpose flour
⁃ 1/2 tsp salt
⁃ 1 1/2 teaspoons of baking powder
⁃ 1/2 teaspoons cinnamon
⁃ 3/4 cup of white sugar
⁃ 3/4 cup of brown sugar
⁃ 3/4 cup pumpkin puree
⁃ 1 egg
⁃ 1 teaspoons of vanilla
⁃ and 1 cup of room temperature unsalted butter

In a medium mixing bowl, add the butter and sugar and cream together until light and fluffy.

Stir in the pumpkin puree.

And the vanilla extract.

Next stir in the flour in small installments.

Put the dough in the fridge for at least one hour.

A few minutes before the dough comes out of the fridge you can assemble the filling.

You will need 8 ounces of softened cream cheese and 1/4 cup of sugar.

You could also add 1/2 teaspoon of vanilla extract if you want, however this can make the filling a bit runny.

Stir to incorporate.

Finally we are going to assemble a sugar coating for the cookies, sort of like snickerdoodles.

All you will need is 1/2 cup of white sugar and 1 1/2 teaspoons of cinnamon.

Grease your cookie sheets and grab a tablespoon disher and a teaspoon.

To form a cookie, first take a tablespoon of dough and flatten it into a pancake.

Spoon a teaspoon of filling onto the dough and create another tablespoon sized dough pancake.

Place the second dough disk on top and seal the edges.

Roll the entire thing in your hands to form a ball, then roll the ball in the sugar mixture.

Repeat until you run out of dough or filling.

It’s important to press down the tops of the cookie balls with the bottom of a cup.

If the dough sticks you can dip the bottom of the cup in the sugar mixture.

Bake in your 350 degree oven for about 12 minutes.

These cookies are a great use of canned pumpkin puree, and will make a great addition to the dessert table come thanksgiving.
