Crockpot lasagna /healing from cipro

I wasn’t feeling well, and with the weather being so hot this week, I definitely didn’t want to turn on the oven. So, I decided to use my crockpot to make lasagna instead. I’m using ingredients I already had in my pantry, and since I can’t eat anything from a can or bottle, I made my tomato sauce from scratch.
I’m also going light on the cheese because I can’t handle too much salt —but I still wanted to be able to enjoy at least a bite of this lasagna. I carb cycle, so I won’t be eating a full serving since I typically avoid bread and pasta.
If you’re working or out of the house and need a hot meal ready when you get home, this is a great option. Just prep it, set it on a timer for 3–4 hours, and dinner will be ready when you walk in the door.

I’m not making my pasta from scratch today—it's a busy week and I needed to keep things simple.

Note: The clip on a crockpot lid is typically there to secure the lid during transport. It helps prevent spills if you’re taking your crockpot to a potluck, party, or any kind of gathering. It’s not meant to be used while cooking, especially for long periods, because it can create a pressure seal that the crockpot isn’t designed to handle—potentially dangerous. It can explode and cause burning.
