Sorakaya Pachadi (Bottle Gourd Chutney) - A Traditional Andhra Recipe

Sorakaya Pachadi is a flavorful and healthy chutney made from bottle gourd (sorakaya), a commonly used vegetable in South Indian cuisine. This pachadi (chutney) is a part of traditional Andhra meals and pairs well with hot rice, dosa, or chapati. It is prepared using cooked bottle gourd blended with spices, tamarind, and lentils, giving it a tangy, spicy, and slightly sweet taste.

Ingredients:

Bottle gourd (Sorakaya) – 1 medium-sized, peeled and chopped

Green chilies – 2-3 (adjust as per spice preference)

Tamarind – small lemon-sized piece

Urad dal (Black gram dal) – 1 tbsp

Chana dal (Bengal gram dal) – 1 tbsp

Mustard seeds – 1/2 tsp

Cumin seeds – 1/2 tsp

Dried red chilies – 1-2

Curry leaves – 1 sprig

Garlic cloves – 2-3 (optional)

Salt – to taste

Turmeric powder – 1/4 tsp

Oil – 1 tbsp

Water – as required

Coriander leaves – for garnish

Preparation Method:

Cooking the Bottle Gourd:

Peel the bottle gourd and chop it into small pieces.

In a pan, add 1/2 tsp oil and sauté chopped bottle gourd with green chilies until soft.

Add tamarind while cooking so it softens.

Roasting the Spices:

In a separate pan, heat the remaining oil.

Add urad dal, chana dal, mustard seeds, cumin seeds, dried red chilies, and curry leaves.

Sauté until the dals turn golden brown and aromatic.

Add garlic (if using) and sauté for a few seconds.

Grinding the Pachadi:

Let the cooked bottle gourd and roasted ingredients cool.

Blend them together with salt and little water to a coarse or smooth chutney (as per preference).

Adjust salt and spice levels.

Tempering (Optional):

Heat 1 tsp oil, add mustard seeds and curry leaves, and pour this tempering over the chutney.

Serving:

Garnish with chopped coriander leaves.

Serve with hot rice and a dollop of ghee, dosa, or chapati.

Tips:

Adjust the spice level by increasing or decreasing green/red chilies.

You can add a small piece of jaggery for a mild sweetness.

Fresh coconut can be added for extra flavor.

This Sorakaya Pachadi is not only delicious but also nutritious, as bottle gourd is rich in water content, fiber, and essential nutrients. It is a great addition to a healthy diet.
