Can I make bread with only durum wheat flour?
Durum wheat is known for its high protein content.
It is also characterized by very yellow, coarse and large particles.
This affects the volume and texture of the bread.
I wondered what the result will be made. (๑•᎑•๑)
Mukgling's baking method uses the No Knead method.
Using the minimum tools, seek bread making at home easily.
Anyone can make bread easily.

■ Dough Formulation : 200g
B's(%): 100.0%, Tr(g): 100.0g Durum Wheat Flour(DIVELLA Semola di Grano Duro)
B's(%): 2.0%, Tr(g): 2.0g Salt
B's(%): 0.4%, Tr(g): 0.4g Instant dry yeast
B's(%): 10.0%, Tr(g): 10.0g Olive oil(extra virgin)
B's(%): 88.0%, Tr(g): 88.0g Water(20℃)
■ Process|Room temperature : 28.0 ℃

1. Put water in the bowl.
2. Put the instant dry yeast and disperse in water.
3. Add salt and dissolve.
4. Add olive oil and mix well.
5. After adding Semolina durum flour,
Mix evenly until the flour is invisible (dough temperature: 26°C).
6. After 15 minutes of Rest, the first fold (folding)
7. After 15 minutes of Rest, the second fold (folding)
8. After 15 minutes of Rest, the third fold (folding)
9. After 8 hours of Refrigerated fermentation(1°C),
Fourth fold(folding)
11. After 60 minutes of Rest, Shaping (Please see video)
12. Fermentation at room temperature for 50 minutes
13. Preheat oven.
Oven temperature is raised as high as possible during the Final Proofing to preheat
(my oven maximum temperature 250℃)
Preheat the lodge in a fully-heated oven for at least 20 minutes.
(Lodge LCC3 Cast Iron Combo Cooker, Pre Seasoned, 3.2-Quart)
14. Put the dough into the preheated lodge 10-inch combo cooker floor
15. Cover the lid of lodge 10-inch combo cooker.
16. Put it in the oven
17. After baking for 20 minutes,
remove the lid of lodge and continue baking for 5 minutes.
(total: 25 minutes)
■ Note: Always be careful when using oven, lodge combo cooker
(It is very hot, so use it after wearing very thick oven gloves)
