Ingredients:
Roating the Rawa
GHEE | घी 1 TSP
UPMA RAWA | उपमा रवा 1 CUP
Tempering & cooking
CASHEW | काजू 10 NOS.
GHEE | घी 2 TBSP
PEANUTS | मूंगफली 1 TBSP
MUSTARD SEEDS | राई 1 TSP
URAD DAL | उरद दाल 1 TSP
CHANA DAL | चना दाल 1 TSP
GINGER | अदरक 1 TSP
GREEN CHILLI | हरी मिर्च 2 NOS. (CHOPPED)
ONION | प्याज़ 1 MEDIUM SIZED. (CHOPPED)
CURRY LEAVES | कड़ी पत्ता 10-12 NOS.
FRENCH BEANS | फ्रेंच बीन्स 5-6 NOS. (DICED)
CARROT | गाजर 1 SMALL SIZED (DICED)
CAPSICUM | शिमला मिर्च 1/2 MEDIUM SIZED OR 1 SMALL (DICED)
GREEN PEAS | हरे मटर 1/4 CUP
HOT WATER | गर्म पानी 3 CUPS
SALT | नमक TO TASTE
SUGAR | शक्कर A PINCH
BLACK PEPPER | काली मिर्च 1/2 TSP (FRESHLY CRUSHED)
LEMON JUICE | नींबू का रस OF HALF LEMON
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
GHEE | घी 1 TSP (OPTIONAL)

Method:
Before making the upma, make sure that you cut the veggies into small dices. You can mix all the veggies into one bowl as they will be added together, just keep the onion separately.
Set a fry pan over medium heat, once it gets slightly hot add ghee & let it get hot, then add the rawa & roast it over medium to low flame for 3-4 minutes while stirring it continuously.
Once roasted, transfer the rawa into a bowl & set it aside to cool down. It is very important that you use upma rawa and not fine rawa.
To fry the nuts, set a kadhai over high flame then add the ghee & let it get moderately hot. Then add the cashews & peanuts, fry them over medium to low flame until they turn light golden brown, then transfer them into a bowl & set it aside.
Now in the same kadhai, add mustard seeds & let them crackle, then add the urad dal & chana dal, stir & cook over low flame until the dals get light golden brown.
Further add the ginger, green chilli & onion, stir well & cook over high flame until the onion turns translucent, then add the curry leaves & stir well.
Then add all the veggies & cook them over a high flame for 2-3 minutes.
Then measure & add the water along with salt, sugar & black pepper, let the water come to a rolling boil.
The perfect ratio of Rawa to Water for the perfect upma is 1:3. So 1 cup of rawa & 3 cups of water. Use the same cup measure to measure both.
Then add the roasted rawa while stirring it continuously to avoid lumps, cook over medium high flame while stirring continuously until there is no separate water visible.
Then cover & cook over low flame for 4-5 minutes, open the lid & stir it once after 2 minutes.
Once cooked over low flame, remove the lid & stir the upma, then put the lid back on, switch off the flame & let it rest for 5 minutes, this step is very important.
Next, remove the lid & add the fried nuts, lemon juice, fresh coriander & ghee, stir well.
Your perfect, melt in the mouth Vegetable Upma is ready, serve it hot with some coconut chutney & sambar.
