Per muffin (1/12 of the recipe)
• Calories: ~175 kcal
• Protein: ~8 g
• Total Carbohydrates: ~15 g
• of which Sugars: ~6 g
• Fats: ~9 g
• of which Saturated: ~2.5 g
• Dietary Fiber: ~2.5 g

Ingredients for small 12 or 6 big muffins : ⬇️
Dry:
• 150 g oat flour (or blended oats)
• 50 g almond flour (or ground almonds)
• 2 tsp baking powder
• ¼ tsp salt
• 1 tsp cinnamon (optional)

Wet:
• 2 eggs
• 120 g plain Skyr
• 80 ml milk of choice (cow’s, almond, oat…)
• 60 ml olive oil or melted coconut oil
• 60–70 g honey or maple syrup
• 1 tsp vanilla extract
• Zest of 1 lemon (optional, great with blueberries)

Add-ins:
• 130–150 g blueberries (fresh or frozen, don’t thaw if frozen)
• 1 tbsp flour (to toss blueberries)

Optional toppings:
• 40 g chopped walnuts
• 1 tbsp oat flour
• 1 tbsp almond flour
• 1 tbsp coconut sugar, brown sugar, or erythritol
• 1 tbsp melted butter or coconut oil
• Pinch of cinnamon (optional)
