How to Make 6 Traditional OSECHI Japanese New Year Dishes

Oseshi is Japanese traditional new year dishes. On this video we show you how to make six of the most popular ones.

We are making these six dishes:
Kuromame, Kazunoko, Tazukuri, Datemaki, Kurikinton, Namasu.

Ingredients
[Kuromame]
200 grams (1/2 lb) kuromame black beans
200 grams (1 US cup) sugar
1 tsp soy sauce
pinch of salt
*During simmering kuromame, please check the amount of hot water.
If the hot water is less, add hot water.

[Kazunoko]
130-150 grams (1/3 lb) kazunoko herring roe
1/2 tsp salt
500 ml ( 2 US cups) water
1/2 tsp instant dashi
240 ml ( 1 US cup ) water
1 tbsp soy sauce
1 tbsp sake

[Tazukuri]
30 grams (1 oz) dried small sardine ( or anchovy)
2 tbsp soy sauce
2 tbsp mirin
2 tbsp sugar

[Datemaki]
1 fillet (70-100 grams) cod
8 eggs
1 tbsp potato starch (or corn starch)
70 grams (1/3 US cup) sugar
2 tsp soy sauce
1 tsp instant dashi
80 ml (1/3 US cup) water
*When you take the omelette out from the oven, please check it is done or not.

[Kurikinton]
300 grams (about 10, 3/4 lb) chestnuts
1-2 gardenia
100 grams (1/2 US cup) sugar
1 tbsp mirin
pinch of salt
1 cup water
600 grams (1 1/2 lb) sweet potatoes
200 grams ( 1 US cup) sugar
3 tbsp mirin

[Namasu]
200 grams (1/2 lb) daikon radish
40 grams (1/10 lb ) carrots
1 tsp salt
1 tbsp sugar
1 tbsp vinegar
1 yuzu (optional)
