The Best Mac ‘N Cheese you’ll ever have (don't quote me on that)
Cheese is too good for us humans, we do not deserve cheese.. I mean it when I say we DO NOT DESERVE CHEESE.. and I guess the people who agree with that statement the most are vegans... and while I know vegan alternatives are not necessarily always ideal, sometimes a vegan recipe just hits different..so today we make vegan Mac n cheeeeeeeeeEEEEeEEee.
Hehe it’s Baked Vegan Mac N Cheese Recipe:
Mac n cheese:
8oz Rigatoni Pasta
3/4cup Unsweetened Almond Milk
4oz Vegan Cream Cheese
5oz Vegan Mozzarella shreds
5oz Vegan Sharp Cheddar shreds
1/4cup Nutritional Yeast
1tsp Garlic Powder
1/2tsp Cracked Pepper
Breadcrumb topping:
1/2cup Plain Panko Breadcrumbs
2Tbsp Vegan Butter, melted
1 tsp Garlic Powder
Pinch of salt
Dash of dried basil
1. Preheat oven to 400°F
2. Bring water to boil and add in a good amount of salt (a Tbsp or so)
3. Cook rigatoni according to box instructions, cut off about 2-3 minutes of cook time as the noodles will finish cooking in the oven
4. In a dutch oven or large saucepan, heat almond milk and cream cheese until melted together & creamy
5. Add in shredded cheeses, nutritional yeast, garlic powder & pepper
6. Stir occasionally on low heat until sauce reaches a velvety texture
7. Mix drained Rigatoni into the sauce & remove from heat (if using Dutch Oven, set aside for breadcrumb topping, if using a saucepan, transfer into an 8x8 baking dish)
8. In a small bowl, mix breadcrumbs, melted vegan butter and seasonings
9. Evenly sprinkle breadcrumb topping onto Mac n cheese
10. Put into the 400° oven for 30 minutes, uncovered
11. Serve hot and enjoy!
(If you prefer a saucier mac n cheese, you can double the sauce recipe and keep the same amount of noodles, of course you can teeter all of the ingredients to your liking, as this is a super versatile & fool proof recipe!)
