INGREDIENTS FOR BANANA BREAD
2 cups flour
1/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/3 teaspoon salt
Pinch of nutmeg
1/2 cup vegetable oil
2 medium eggs
1 teaspoon vanilla
5 medium ripe banana
INSTRUCTIONS:
Mix the flour, baking powder, baking soda, salt and nutmeg and set aside.
In a different bowl mash the banana until almos t puree,mix the sugar,Vegetable oil, eggs,and vanilla until it’s combined.
Pour in the flour mix into the banana mix using a spatula.Once completely mixed, pour into pan and bake for 25 mins or untill a toothpick is inserted and comes out clean.
INGREDIENTS FOR APPLE CAKE
1 and 1/2 cups plain flour or all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup caster sugar or granulated sugar
1 cup (approximately 1 large) red or green apple, peeled and roughly chopped
2 large eggs
1 teaspoon vanilla extract
1/2 cup vegetable oil or flavourless oil
INSTRUCTIONS
Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper.
In a large mixing bowl, add flour, baking powder, baking soda, salt and sugar. Add chopped apple and stir briefly to combine.
In a separate bowl, add eggs, vanilla, oil and Whisk briefly just to break up the egg yolks.
Add dry ingredients to wet ingredients and gently mix with a wooden spoon until combined – but be careful not to over mix. Spoon batter into prepared tin.
Bake cake for approximately 30-35 minutes or until a skewer inserted into the middle comes out clean. Transfer cake to a wire rack to cool completely.
INGREDIENTS FOR STRAWBERRY JAM CAKE
2 ⅓ cup cake flour
2 t baking powder
1 t kosher salt
¾ cup unsalted butter, soft and pliable
1 ⅔ cup granulated sugar
1 t vanilla extract
5 large egg whites
¼ cup whole milk
1 cup strawberry jam, from above
INSTRUCTIONS:
Preheat oven to 325°F convection (fan) or 350°F conventional. Spray and line 2, 9 or 8 inch cake pans with parchment.
In a large bowl sift together cake flour, baking powder, salt. Set aside.
In a medium bowl whisk or stir together milk, vanilla extract,and cooled strawberry jam from above.This will reduce the amount of folding needed to combine the ingredients later, and will keep the cake lighter and more tender.
Add the butter and sugar to the bowl and cream the butter and sugar until light and fluffy. This will take at least 5 minutes depending on your mixer. It will also depend on how soft your butter was before mixing. The softer the butter, the faster the creaming process.Whisk egg and add.
Add dry ingredients to wet ingredients andmix on low speed until combined – but be careful not to over mix. Spoon batter into prepared tin.
Bake in preheated oven for 15-20 minutes or until a cake tester or toothpick comes out from the center with only clinging crumbs.
Cool 10 minutes in pans before flipping out onto a wire rack to cool completely.
