Potatoes 11 months old and roasted, new potatoes harvested same day

How you can store some varieties of potato, in this case Charlotte, for almost a year. By which time the new potatoes are ready.
I prepare the old potatoes to roast, then harvest some new Dunluce from a no dig bed. I simply pull the stems to find the potatoes, with no digging needed.
It's early June and also in the roasting pan are old squash Crown Prince, old onions, new onions and new beetroot.
The cooking part of this video was Edward's idea.
The vegetables roasted in 35-40 minutes at 200C/400F approx, top rung of a grill oven.
