Slow Living ~ Banana Pie on A Rainy Day. Silent Vlog #NoTalk
Warm rainy days spent in the kitchen. I made a sweet vegan/plantbased banana pie. So good!

Banana Pie/Tart [Vegan] Recipe:
Crust:
2 and 1/2 cups all purpose flour
1 teaspoon salt
2/3 cup canola or vegetable oil
4 tablespoons ice cold water + 2 tbsp cold soy milk
Instructions
1. Combine flour and salt in a medium mixing bowl. In a separate mixing bowl, combine the oil and water + soy milk; don't mix the liquids together.
2. Add liquids to the flour and salt mixture. Stir with a fork until a ball forms; add 1 tablespoon of ice water if it is very crumbly and not holding. It is okay if the dough is not totally cohesive (some crumbles may exist).
3. Divide the dough into two equally sized balls. Place in an airtight container and let rest in the fridge for at least 15 minutes.
4. For one pie crust, place the dough ball between two pieces of wax paper. Use a rolling pin to roll out until it reaches 12 inches in diameter.
5. Carefully peel the top layer of wax paper off. Invert the pie crust into a pie plate and carefully peel the wax paper off of the dough.
Filling:
1.5 - 2 apples washed and peeled cut into thin slices (wedges) 2-3 ripe bananas
2 tbsp coconut oil
2 tbsp + 1/2 cup flour
1/2 cup water
1/2 cup brown sugar
1/2 cup white sugar
1 tsp vanilla extract
2 tsp cinnamon (or as desired)
Instructions:
1. Layer the sliced apples on the crust (bottom of pie dish)
2. Cut up bananas into rounds and layer on top of apples
3. In a sauce pan, melt two tablespoons of coconut oil.
4. When melted, add 2 tbsp of flour a little at a time and whisk
5. Continue adding the rest of the 1/2 cup of flour slowly and whisk 6. Add 1/2 cup of water and continue stirring.
7. Add in brown sugar, whisk
8. Add in white sugar, whisk
9. Continue whisking until the sauce becomes thick
10. Add cinnamon & vanilla extract and remove from heat
11. Pour the mix on top of the banana-apple-crust until completely covered
12. Top the pie/tart with the second dough sheet and seal around. Make an incision in the middle. 13. Sprinkle cinnamon and brown sugar on top (as desired)
14. Bake in oven at 180 C (our oven 165 - 170) for 40- 45 minutes.
15. Sprinkle with confectioners' sugar.
