Rec Tec 590! Crispy Chicken Thighs with Franks Red Hot!
My first attempt to make chicken thighs with crispy skin! The Rec Tec 590 ran solid!
• Started with 4 pounds of Bell and Evans Chicken Thighs.
• Coated ½ of the thighs with Frank’s Red Hot powder.
• Placed them around the outside of the grates where the heat is even and had the grill running at 450 degrees.
• When they reached about 120 degrees I moved them around, and again around 160 degrees until they finished around 180 degrees.
• Pulled them off and let rest for a few minutes.
Summary: Skin got pretty good. I think next time I would start these off at 400 and once they reached 125 degrees turn the grill up to 500 to finish them off and crisp the skin!
