Paula's Retro Kitchen 1960s: Vintage Recipes & Vintage Songs by Dale!
Welcome back to Studio K, everybody! We got creative with this one, going back to the early 1960s with two classic recipes: Swedish Meatballs from the Better Homes and Gardens New Cookbook, c. 1962, and Pineapple Upside-Down Cake from the Betty Crocker New Picture Cookbook, c. 1961. Recipes appear below.

SWEDISH MEAT BALLS
Better Homes and Gardens New Cookbook, published 1962
You will need:
¾ lb. lean ground beef
½ lb. ground veal
¼ lb. ground pork
1 ½ cups soft bread crumbs
1 cup light cream
½ cup chopped onion
1 egg
¼ cup finely chopped parsley
1 ½ tsp salt
¼ tsp ginger
Dash each pepper and nutmeg
Gravy:
2 Tbsp all-purpose flour
¾ cup canned condensed beef broth
¼ cup cold water
½ tsp instant coffee
Steps:
Have meats ground together twice (Paula: I did not do this). Soak bread in cream, about 5 minutes. Cook onion in 1 Tbsp butter till just tender.
Mix meats, crumb mixture, onion, egg, parsley, and seasonings. Beat vigorously till fluffy (about 5 minutes at medium speed on mixer, then 8 minutes by hand. (Paula: I did not do the by-hand step.) For into 1 ½-inch balls (mixture will be soft – for easier shaping, wet hands – or chill first.)
Brown lightly in 3 Tbsp butter, shaking skillet to keep balls round (don’t try to do too many at once). Remove balls.
Make gravy: Stir flour into drippings in skillet; add broth and water, and coffee. Heat and stir till gravy thickens.
Return meat balls to gravy, cover, cook slowly about 30 minutes, basting occasionally. Makes 3 dozen 1 ½-inch balls.
(For cream gravy, substitute 1 cup light cream and ½ tsp concentrated meat extract for broth and water. Make gravy; season.)

SPRINGTIME CALICO MOLD
Better Homes and Gardens New Cookbook, published 1962
You will need:
1 3-ounce package lemon-lime flavored gelatin
1 cup boiling water
¼ tsp salt
¾ cup cold water
3 Tbsp lemon juice
½ cup shredded cucumber
¼ cup thinly sliced radishes
2 cups cubed Cheddar cheese
Steps:
Dissolve gelatin in boiling water. Add salt, cold water, and lemon juice. Chill till partially set.
Add cucumber, radishes, and cheese. Turn into a 3-cup mold. Chll till firm. Makes 5 or 6 servings.

PINEAPPLE UPSIDE-DOWN CAKE
Betty Crocker’s New Picture Cookbook, published 1961
You will need:
1/3 cup butter
½ cup brown sugar (packed)
1 can (20 oz) sliced pineapple, drained (crushed may be used if well drained)
1 ½ cups cake flour, or 1 1/3 cups all-purpose flour
1 cup sugar
2 tsp baking powder
½ tsp salt
1/3 cup soft shortening
2/3 cup milk
1 tsp vanilla
½ tsp lemon flavoring, if desired
1 egg
Steps:
Heat oven to 350 degrees F. Melt butter in heavy 10-inch skillet or square pan, 9x9. (Paula: I used 8x8 and it worked great.) Sprinkle brown sugar evenly over butter. Arrange pineapple in attractive pattern on the butter-sugar coating. Decorate with pecan halves and cherries, if desired.
Stir flour, sugar, baking powder, salt in mixer bowl. Add shortening, milk, flavorings. Beat 2 min., medium speed on mixer or 300 vigorous strokes by hand. Scrape sides and bottom of bowl constantly. Add egg. Beat 2 more min., scraping bowl frequently. Pour batter over fruit. Bake 40 to 50 min. Immediately turn upside down on serving plate. Leave pan over cake a few minutes. Serve warm with whipped cream.
