Behold Valencay: The Pyramid of Cheese. In honor of July being French Month at Murray's, here is a behind the scenes look at how one of our most popular French cheeses is aged in our very own caves in NYC!
Starting with "Green" (Fresh) cheeses flown in directly from the Loire Valley of France, our cavemasters carefully apply vegetable ash to the outside and then age the cheeses in a variety of different caves. The result? A piquant paste and luscious creamline, perfect with sparkling wine.
