Making Sushi Knife out of Swedish HSS Saw Blade

Japanese chef knife DIY project by DOROCO.

HSS or HS (high-speed tool steel) is an excellent material for sushi knife DIY.
Designed to withstand harsh operating environment and high heat (as with the drill bits or machine saws), HSS makes a very sharp and durable knife.

Making a knife using an HSS saw blade, NO HEAT TREATING is required because the saw blade comes already heat treated to HRC 62-64 from the factory, and the material stands the heat during the cutting and the grinding (it does not get soft or change it's properties). The only downside... it's hard and tough to cut and grind.

The M2 steel, which is familiar to knife hobbyists, belongs to this category.
