Crispy Egg Avocado Toast With Smoked Salmon
This Crispy Egg Avocado Toast with Smoked Salmon features golden sourdough topped with creamy avocado, silky smoked salmon, and jammy eggs wrapped in a crispy mozzarella crust. Finished with chili oil, chives, and sesame seeds, it's an easy high-protein breakfast or brunch packed with flavor and texture.
➡️ Ingredients
2 slices sourdough bread
1 tbsp olive oil
3 eggs
100 g mozzarella cheese grated
1 avocado mashed
80 g smoked salmon
1 tbsp chili oil
1 tbsp chopped chives
1 tsp sesame seeds
Instructions
➡️Cook the Jammy Eggs – Bring a small pot of water to a boil and carefully add the eggs. Cook for 7 minutes for jammy yolks, then transfer them to ice water. Peel the eggs and cut them in half lengthwise.
➡️Make the Crispy Cheese Crust – Sprinkle the grated mozzarella into a nonstick skillet over medium heat, forming 6 small circles. Once the cheese turns golden and crispy, place an egg half on top of each circle and cook until a crispy cheese crust forms underneath. Carefully remove from the skillet and set aside.
➡️Toast the Bread – Heat the olive oil in a skillet and toast the sourdough bread until golden brown and crispy on both sides.
➡️Assemble the Toast – Scatter the diced avocado over the warm toast and gently mash it with a fork. Arrange the smoked salmon evenly over the avocado.
➡️Add the Crispy Eggs – Carefully place the crispy cheese-crusted jammy eggs on top of the smoked salmon.
➡️Finish and Serve – Drizzle with chili oil and sprinkle with chopped chives and sesame seeds. Serve immediately while the toast is warm and crispy.
