Gluten Free Chocolate Chip Pizookie with Peanut Butter Cups | Giant Cast Iron Skillet Cookie Recipe

I haven't had the BJ's Pizookie, and I didn't even hear about it until recently, but I've been making this Gluten Free Pizookie recipe for over a decade now and it hits every time.

A pizookie was originally supposed to be a cross between a deep dish pizza and a cookie, which is where the Z comes into play. Now, I think people just call it a cookie pie instead and wonder wtf the z is from.

I honestly don't even care what it's supposed to be because I know it's delicious. My kids would call it bussin', but as a millennial, it would be too cringe for me to say that.

This Gluten Free Skillet Cookie recipe has everything you want in a cookie, but make it GIANT! It's thick, soft, gooey, loaded with chocolate chips and peanut butter cups, and it has chewy/crispy edges.

This pizookie dough is a peanut butter based cookie dough for even more flavor.

I highly recommend serving this warm with a scoop of vanilla ice cream 🍦

Ingredients You'll Need:
1/2 cup unsalted butter, softened
1 1/4 cups light brown sugar, packed
1/2 cup creamy peanut butter
2 large eggs, room temperature
1 teaspoon pure vanilla extract
2 cups gluten-free all-purpose flour (I'll link my flour blend below)
1/2 teaspoon xanthan gum (omit if your flour blend contains it)
1 teaspoon baking soda
1/2 teaspoon fine sea salt
12 REESE'S peanut butter cups, chopped (or just measure these with your heart)
1 cup chocolate chips (not in the video because I decided these were an afterthought)
