How to Make Colored Pasta Dough Using Beets or Parsley

INGREDIENTS:
For the parsley dough: 1 bunch parsley, 3 large eggs, 2-2.5c “00” pasta flour (all purpose will work too) start with 2 cups and add more as needed
For the beet dough: 1 whole beet, peeled and chopped, 3 large eggs, 2-2.5c “00” pasta flour (all purpose will work too) start with 2 cups and add more as needed
TIPS:
*If you don’t have a high powered blender, wrap the peeled beet in a wet paper towel and microwave for 2-3 min before chopping.

*Wrap dough in plastic film and let rest for 30 minutes before sheeting. It will keep up to 3 days in the refrigerator.
