Ceviche in Ecuador (& the Cheapest Shrimp in the World?)

Talking ceviche and the shrimp industry in Ecuador.
When you think ceviche, most people think about Peru where ceviche was invented, but Ecuador's version is unique and delicious. There are many different versions of the dish, but the basic is fresh fish, shrimp, or other seafood soaked in a lime broth. The seafood is often only "cooked" by soaking it in lime juice, but in Ecuador they usually quickly boil their ceviche ingredients. Every province seems to have their own twist on it, but in this video I'm going for Jipijapa style ceviche. It contains 2 ingredients that you don't normally find in the seafood dish.
I'm also talking shrimp in Ecuador, one of the countries most important exports. I'll throw all kinds of interesting facts at you including how Ecuador has become the cheapest country for shrimp in the world.
