Pesto Delicious Creamy Recipe - How To Make a Perfect "Pesto alla Genovese"

Pesto is a very versatile sauce and can be used not only on pasta (just adding some hot water from the pasta pot), but also in salads, with some vegetables and combined with other sauces.
It comes from the area of Genoa, in Northern West Italy and traditionally is made using a marble mortar.
The purpose of the mortar is to obtain a sauce that doesn't require cooking because in the process we extract the essential oils from the ingredients.
That's the reason why the quality of the ingredients is vital for a remarkable pesto.
If you don't have one, you can find quite cheap ones online. The one that I used for this video, for instance, is a 12,00 EUR mortar from IKEA.

INGREDIENTS (2-3 portions):

BASIL (40 leaves)
COARSE SALT (a pinch)
GARLIC (1/2 clove)
PINE NUTS (2 tbsp)
PARMIGIANO REGGIANO (3 tbsp)
EXTRA VIRGIN OLIVE OIL (abaout 3-4 tbsp)

INGREDIENTI (2-3 porzioni):

BASILICO (40 foglie)
SALE GROSSO (un pizzico)
AGLIO (1/2 spicchio)
PINOLI (15 gr)
PARMIGIANO REGGIANO (15 gr)
OLIO EXTRA VERGINE (50 gr circa)
