This seasonal summer vegetable also called tori, turai and jhinge (in Bengali) contains a lot of essential components. It is low in calories too and high in water content.

DOODH TORI KI SABZI Serves 2 to 3

Ingredients

Tori/Ridge gourd – 3 large
Green chilies – 2 whole
Milk (warm) – ¾ cup
Rice flour – 1 tsp
Coriander powder – 1/3 tsp
Mustard oil – 2 tbsp
Onion seeds/Kalonji – ½ tsp
Sugar – 1 tsp
Salt – to taste
Ghee – 1 tsp

Method:
1. Peel the ridge gourd and cut it lengthwise. Then cut half inch thick slices. Keep aside.
2. Add the rice flour to the warm milk and mix well. Keep aside.
3. Heat the oil and temper it with onion seeds.
4. Add the chopped gourd and cook stirring continuously till lightly coloured. Season with salt and sugar. Add the coriander powder. Mix well.
5. Pour in the milk mix, bring to a boil, cover, and cook till the gourd is done.
6. Reduce the gravy on high heat as desired. Add in the green chilies whole or slit. Drizzle ghee. Mix, cover, let it rest for 2 to 3 mins before serving.

TAMATAR TORI KI SABZI Serves 2 to 3

Ingredients

Tori/Ridge gourd – 3 large
Red Chili (dry) – 1
Green chilies – 2 whole
Ginger paste – 1 tsp
Tomato (large) - chopped
Cumin powder – 1 tsp
Turmeric pdr – 1/3 tsp

Mustard oil – 2 tbsp
Panch foron (Bengali 5 spice) – ½ tsp
Sugar – 1 tsp
Salt – to taste
Ghee – 1 tsp

Method:
1. Peel the ridge gourd and cut it lengthwise. Then cut half inch thick slices. Keep aside.
2. Heat the oil and temper it with panch foron and dry red chili.
3. Add in the chopped gourd. Season with a bit of salt. Cook till it starts releasing water. Add in the ginger paste. Cook till the raw smell goes away.
4. Add the chopped tomato. Cook briefly. Cover and cook for 2 mins.
5. Add in the cumin and turmeric powders along with sugar. Mix well. Adjust the seasoning. Cover and cook till the gourd is done.
6. Add in a whole green chili. Cover for 2 to 3 mins before serving.
