Chouquettes | Only Flour, Eggs and Butter Needed | Sugar-Topped Choux Pastry Puffs | Favorite Recipe

Nestled among golden Croissants and Pains au Chocolat, these sugar-pearl-topped pastry puffs can be found in most French Pâtisseries. They will delight and captivate you, however, the best part about them is - they are extremely simple to make!

Preparation time: 15 minutes
Baking time: 15 minutes
Servings: 10+

Ingredients:
- 1 cup plus 1 tbsp (250 ml) water
- 100 grams (3,6 oz; just slightly less than 1 US stick) unsalted butter
- 150 grams (1 cup, plus 3 tbsp) all-purpose flour
- 1 tbsp sugar
- 1 tsp vanilla sugar
- ½ tsp salt
- ½ tsp baking powder
- 3 eggs
- large sugar crystals for sprinkling

Step 1:
In a large saucepan or similar, bring water and butter to a boil; preheat oven to 210°C / 410°F.

Step 2:
While it is boiling and the butter has melted, remove from the heat and immediately add the flour, salt and baking powder.

Step 3:
Mix immediately until smooth, homogenous and not sticking to the sides; leave to cool for a minute or so before adding the eggs, so they don't cook.

Step 4:
Incorporate the eggs one by one; make sure each egg is completely absorbed before adding the next; add both sugars somewhere in between (you can use an electric mixer for this step).

Step 5:
With a fork or piping bag, place teaspoon sized pieces of pastry on a baking sheet lined with parchment paper; sprinkle with large sugar crystals.

Step 6:
Bake in a preheated oven (210°C / 410°F) for 12 to 17 minutes, or until golden brown; let cool on a wire rack before serving.
