"Crunchy Chocolate-Covered Banana Bites You Need to Try"
Chocolate-Covered Peanut Butter Banana Bites
Servings: 4–8 bites (depending on banana size)
Prep Time: 15 minutes
Freeze Time: 1–2 hours
Ingredients:
- 1 ripe but firm banana, peeled
- 2–3 tablespoons peanut butter (creamy or crunchy)
- 2 tablespoons chopped peanuts (plus more for topping)
- 1 cup chocolate chips (dark, milk, or semi-sweet)
- 1 tablespoon coconut oil
- Optional: sprinkles or flaky sea salt for decoration
Instructions:
1. Slice the Banana:
Cut the banana in half crosswise, then slice each half lengthwise to create 4 long, flat pieces total.
2. Add Peanut Butter & Nuts:
Spread a layer of peanut butter over each banana slice. Sprinkle with chopped peanuts.
3. Freeze the Slices:
Place the prepared banana slices on a parchment-lined tray and freeze for 30–60 minutes, or until firm.
4. Melt the Chocolate:
In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth.
5. Dip & Decorate:
Remove frozen banana slices from the freezer. Dip each one into the melted chocolate to coat. Immediately sprinkle with additional chopped peanuts (and sprinkles or sea salt, if using).
6. Freeze Again:
Return the chocolate-dipped banana slices to the freezer for another 30 minutes or until fully set.
7. Serve & Enjoy:
Best enjoyed straight from the freezer for a cool, crunchy treat!
