This time, I would like to show you how to make Kimchi with Fish sauce. It’s basically almost the same way making vegan kimchi. just a few parts are different.
If you watched my other Vegan kimchi video, you will know that my son wanted to make kimchi when he grows up by watching my video. If you watch that video you will learn how to make kimchi step by step. Also check out the video "How to salting cabbage" .
Ingredients for Korean Kimchi:
1 Napa cabbage around 3 lb
Radish around 1-1.5 lb (Korean radish or daikon radish)
1 big Organic Leek or 1 pack of asian chive around 1lb
Shredded Carrots 8-10 oz
1/2 cup of salt for salting cabbage
For kimchi paste for kimchi sauce:
1/2 cup of brown rice flour
2 cups of water
For Kimchi sauce:
Brown rice flour paste
3/4 cup of Korean red pepper flakes
2-3 tbsp of minced or ground garlic
1 tsp of minced ginger (optional): I didn't use it this time.
6 tbsp of Fish sauce : I used Korean Anchovy Fish sauce
1 tsp of kosher salt
1.5 or 2 tbsp of coconut sugar: I used 2 tbsp this time.
For tools you need:
1 big bowl for salting cabbage and making kimchi (15inch x 6 inch)
1 middies bowl
1 colander 11inch x 5inch
3/4 cup , 1/2 cup,
1 tbsp, 1/2 tbsp, 1 tsp
