Lemon Loaf Cake // Pastry Pleasures
This recipe will make a 1kg cake or 8" cake
Ingredients for the cake
- 2 & 1/2 cups all purpose flour
- 1 & 1/2 teaspoons Pradip baking powder
- 1/2 teaspoon Pradip bicarbonate (baking soda)
- 1 & 1/2 cups caster sugar
- 1 teaspoon Lemon Zest
- 1 teaspoon Pradip lemon essence
- 250 butter/margarine
- 4 eggs
- 1 cup buttermilk (mala)
- 1 tablespoons lemon juice
Method
Preheat oven at 180C/350F
Grease & dust a large loaf Pan
Sift the all purpose flour, baking powder and bicarbonate, set aside.
Soften the butter with a mixer until light
Add the caster sugar and cream until the mixture is light and fluffy.
Add the lemon zest and the Pradip lemon essence and mix
Add the eggs and mix until well incorporated.
Add the lemon juice and mix it in.
Alternate the flour mix with 1 cup of buttermilk, starting and ending with flour.
Mix until everything is well combined and mixture is smooth.
Pour the batter into your prepared baking pan and bake for 50-60 minutes, or until done.
To make the glaze,
2 Cups icing/powdered sugar
1/4 cup water/lemon juice
Lemon Zest
Mix the icing sugar with the water until lump free. Add desired amount of lemon zest.
Drizzle on cool cake if desired.
